Pretty in Pink

When life gives you lemons .... make PINK LEMONADE CAKE!! After a ladies weekend featuring Sex and the City 2 and Champagne, Gingerbug Creations was in the mood for something yummy and fabulous! In fact, this whole weekend was all about the girls because Gingerbug Creations also made a Princess cake for a first birthday party (more on that to come later).
The recipe is relatively easy. Also, this cake can be pretty tart, if that is your style, but can definitely be diluted to match what you are looking for. The recipe is flexible and so is Gingerbug Creations!
It is technically a strawberry lemonade cake so we started with a whole bunch of strawberries.

Strawberries are great. They add color and sweetness to the cake and the buttercream frosting. And, because of all the strawberries we had double the lemons. We didn't get a picture of
them (probably because we were sick of them by the time we were done squeezing and zesting them ... maybe next time we will just use lemon juice).

The cake baked relatively quickly. We made two 8 inch cakes. A layer went in between the two cakes and then there was the crumb coating layer. The frosting and cake went into the refrigerator to cool for a couple of hours, making a great dessert for this hot Memorial Day weekend. This is definitely a refreshing summertime treat. Everyone who had a slice loved it ... especially the ladies!! Gingerbug Creations can't wait to make it again.

Sunny Day ... Chasing the Clouds away


OK so maybe Sesame Street has been on a little too much lately, but it did influence a cake we made this weekend. Gingerbug Creations worked on a vanilla rainbow cake with a swiss meringue buttercream frosting.

The most important ingredient in this whole cake is definitely the gel food coloring. Don't be afraid to use a lot but be careful ... you can quickly look like you got into an accident with the knife.

Since this is a layer cake there was a little math involved ... which, on a Sunday afternoon took a minute to figure out.


After making the batter..... NO wait... BEFORE making the batter, weigh the bowl you are using so that you know how much to subtract once the batter is in there. I kinda forgot that when I did it. So now you have the bowl and the batter weighed. Divide by 6. Now ... weight each bowl you are adding the batter into and add the correct amount of batter. Once you have 6 bowls all with the correct amount of batter, you use the gel. Red Orange Yellow Green Blue Purple and TA-DA ...


After baking 2 cakes at a time in the oven (at 350 degrees for approximately 14 mins), 45 mins had passed, we got our frosting completed, and we had 6 thin layers of very vibrant cake. The frosting is a swiss meringue buttercream this is a thicker frosting that is known for holding up and with all the layers that was ideal. You can also change the flavor of the frosting to lemon, orange, or raspberry, but personally vanilla seemed to work well today. Basically the frosting is a whole lotta egg whites, sugar and butter and oh so good. Here is what all the layers look like ...


After this you put a crumb layer of frosting and then the final layer of frosting. It is so fun to watch people cut into the cake and see the surprise on their faces when they see the colors of the rainbow. It tastes as amazing as it looks too!

The only thing that I would do differently ... add thicker layers of frosting in between the cake layers. Other then that the cake turned out great and brightened up everyone's day!

So We Are Doing It ...

Gingerbug Creations is up! Can you believe it?? We are so excited.

We are so passionate about cakes, invitations and all the other party needs.

Here is one example of my personal favorite cakes
It was for my son's first birthday. It was a huge hit, and it is no surprise the response this cake received. After all the hard work that went into this cake I didn't want to cut into it ... but we did! And with flavors of funfetti, chocolate, and vanilla we were all pleasantly surprised ... it tasted as good as it looked!
Gingerbug Creations agree that cakes can bring a smile to people faces. We are here to celebrate special occasions with people and we love doing it. We are loving what we do and we hope you are loving our cakes.
